“Spaghetti” recipe

I cooked a red bell pepper, green bell pepper and onion in a splash of olive oil

added 16oz mushrooms and cooked down for a bit

added a pound of ground turkey, basil, turmeric and cumin, salt and pepper

cook until the ground turkey is well done

I added two of those tiny cans of tomato paste and about 16-20oz of organic veggie broth, mix well. Let cook on low for 15-20 min

I zoodled some zucchini, sprinkled with some salt and layered between napkins to soak up some of the water in them

Top the raw zoodles with the sauce and let it sit a few minutes and then dig in! So so good, quick and easy

Oatmeal bars

So I saw this video on Facebook and decided to make it healthy. It says “Healthy grab and go snack” but I have to change a few things to my liking.

I mixed 2 eggs  and
1/4 cup coconut sugar well in a big bowl

add 3/4 cup unsweetened organic applesauce
1 1/2 cup unsweetened original almond milk
2 tsp vanilla
1/2 tsp salt
1 TBSP cinnamon

Mix well

Add 3 cups quick cooking oats and
2 tsp baking soda

 

Let it sit for 20-ish minutes
fill 1/4 cup scoops in sprayed muffin tins and top with whatever you want. I did raisins, blueberries and even one with raspberries. All were amazing. I mixed the filling in each one. I didn’t like it just on top.

Bake 350 for about 30 min

I also made a batch with no sugar and an extra teaspoon cinnamon and they were still amazing!

The next batch I am going to add chia seeds for added nutrition. My kids want butterscotch chips in theirs so that it tastes like cookies ūüôā

Very good grab and go breakfast!!

Back to Health Day 8 and 9

Soooo Oreos will be the death of me. My kids are BANNED from any and all Oreos forever and ever. I have good self control with almost everything except OREOS!! They are gone.

I have lost a few more pounds, need to get back to my pre-holiday weight so that I can continue with my 2015 goal of health and getting to 175 pounds.

I did not work out the last 2 days because my older two went with dad to work and my younger one was a teething whiney mess. So i am back at it today. 3pm. With bells on.

I feel my muscles in my legs finally, like literally feel there, there used to be too much fat covering them. my arms are getting nicer and short sleeve shirts aren’t so terrifying anymore though my arms still need some work.

Still trying to find consistency but so far this year I’m doing pretty good!

Back to Health Day 5-7

I worked out with Matthew, biceps and triceps….

I worked out with Amy and did chest and back.

I am such in the groove with working out, i forgot how good i feel when I am active. Now to work on eating I have cut Starbucks WAY back and have cut 90% of gluten out. Just a little more tweaking and I will be doing good! Not gonna stop, never gonna quit. Always a process!

Kombucha second ferment

So HERE I posted how to make your kombucha tea and now a quick little how to on making the second ferment.

I got bottles with flip tops, grolsch beer bottles to be exact, it keeps a nice seal for great fizz

This time I did blueberry, one raspberry because I ran out of blueberry

Fill the bottles almost completely full, usually I leave the next empty. It seems to fizz really well this way

I take my scoby out (before adding the tea to the bottles and also take out a cup of the tea, sit it aside in a glass container)

Brew the new batch of tea as I did here and add the scabby and the cup of the tea that you set aside, cover and brew for 8-12 days.

 

Now with the flip top bottles, I open mine daily to burp them so that they don’t explode. They are usually fizzy and flavorful enough for me after 3 days. I strain with a non metal fine mesh strainer and drink it up!!

Picture Tutorial of Kombucha Home Brew

Here is how I do my kombucha. I don’t really have a recipe, but this is what I do each time, this is for the first fermentation. Once this is done and I start the second fermentation I will make a post about that.

I add 4 cups of tap water into a pot, i use tap but you can use filtered

Bring it to a good boil and add like 5-6 organic black tea bags (other people use other ones this is just what i use)

I shut the burner off and let it brew for 6-8 minutes

I give it a few good stirs

pour 1 cup into the tea and stir it really well, it needs to be dissolved completely

I pour the tea into a gallon glass container, NOT plastic, not metal, nothing metal should touch the scoby or the tea the scabby will touch

I fill the container 3/4 the way full with cold filtered water

leave enough room at the top for the scoby and the starter tea

Add the scoby

add the starter tea (about a cup or so )

Cover with an old t-shirt, coffee filter or fabric, secure tightly with a rubber band.

 

I let it is for like 8-12 days, but really just use a plastic straw, stick it below the scoby and taste it, when its as tart as you want or sweet as you want it is done.

Sloppy joes

Oh my gosh I adore these veggie loaded joes

I got the recipe from taste of home and changed it for my family

Sloppy Joesone cup chopped celery, I chopped small green bell pepper and 1 chopped small sweet onion

 

 

Sloppy Joes_3 throw 2 pounds ground turkey in a pan with chopped veggies and cook until meat is done and veggies are tender

Sloppy Joes_7 mix 2 cups ketsup, 4tbsp coconut sugar, 2 tbsp. braggs apple cider vinegar and 2 tbsp. powdered mustard

Sloppy Joes_9 add the ketsup mixture and stir until really mixed

 

Now we haven’t eaten yet so I don’t have a pretty after picture yet, my family slops it in buns and grubs it down, I cook spaghetti squash and top it on that.

Zucchini Boats

Ok I made some impromptu zucchini boats.

zucchini boats_6Now I spooned the meat onto the zucchini and baked at 400 for 20 minutes

Its not really pretty but tastes really good. If you can spare the calories add some cheese and then bake it!

Quinoa Salad

Winner Winner Chicken Dinner

so I don’t like recipes, or following rules, or sticking to meal plans… I like to wing it….. which is why I got fat… so I have learned to semi plan, but I still don’t like recipes.

So I roamed the store today looking for dinner and ended up with this

dinn So I got a pack of organic thin chicken breasts and sliced them up, cooked in a tsp coconut oil and a tbsp. coconut aminos

dinn_6I diced zucchini and squash and added that after the chicken cooked to almost done

dinn_7 Added sliced mushrooms YUMM, cooked until they were all tender

dinn_10 and then added baby kale and spinach, SO GOOD

dinn_8 dinn_9 dinn_14¬†I got this basmati rice, not the best choice but could have been a worse choice….. and we only had a little bit each. And it was really good

My neighbor gave me some lemons, HUGE lemons….

So I did a jug of cucumber and lemon water for me to drink tomorrow…..if you have not tried it, it is AMAZING! So light and refreshing and a nice change from plain water
